INGREDIENTS
Makes 12 popsicles
- 2 cups plain greek yogurt (600 gr)
- 300 gr caster sugar
- 1 cup lemon juice (juice of 6 to 8 lemons depending on size), (240 ml)
- 2 tablespoons orange blossom
- 1 cup citrus marmalade or jam (any type; orange, lemon, grapefruit, etc.)
- Optional topping: melted dark chocolate and desiccated coconut
METHOD
• In a large container, mix together all the ingredients until you obtain a smooth consistency. Use a blender or a sieve to make sure there are no lumps left.
• Fill each popsicle mold a third of the way up.
• Transfer one tablespoon of citrus marmalade or jam in each mold. Using a knife, swirl the liquids together in each mold in order to obtain a "swirled" effect.
• Freeze for at least 6 hours before serving. I recommend freezing them over night.
• To serve, run each popsicle mold under hot water and gently remove the popsicle from of the mold.
• Using a fork drizzle melted dark chocolate on top of each popsicle and top with desiccated coconut. (optional)
Notes
• Directions to melt chocolate: Chop the chocolate. Place the chocolate and a few drops of water in a microwave-safe bowl stopping and stirring at 15 seconds intervals until smooth and creamy.
